You can make these Cookies as a treat to have with your morning coffee on Valentine’s Day, or you could parcel them up into a pretty box and make them as a Valentines Gift.
Ingredients
½ Cup (4 oz) Butter
¾ Cup (6 ozs) Icing (Powdered) Sugar
½ tsp Vanilla Extract
1 Egg
1¼ Cups (10 ozs) Self Raising Flour
Raspberry Jam
Method
- In a large bowl, cream together the butter and icing sugar until they are light and fluffy.
- Beat in the egg, vanilla and mix well.
- Slowly add the flour into the butter mixture to make a soft dough
- Roll out the dough into desired thickness (about ¼ inch thick) on a lightly floured surface.
- For each heart cookie, cut out 2 three-inch rounds.
- Cut the center out of one round of each pair with a heart shaped cutter
.
- Place each piece separately on an ungreased cookie sheet about 1-2 inches apart.
- Bake in a pre-heated 350º F or 175º C oven until lightly browned. Do not overcook. 6 or 7 minutes is usually enough
- Cool on a wire rack.
- Spread the bottom layer with Raspberry, or other red jam and place an open heart cookie on top.
- You can serve the small hearts as separate cookies if you like.
